Brown Sugar Glazed Salmon

I am going to start the blog off with a recipe. Shocker, I know ! But I wanted to share this one with you guys because it is such a hit with us. We haven't always been salmon eaters, but over the past year or so we all have grown to love it and eat it a few times a month. Our local Wegman's has a great selection of salmon and it has become a go to food on busy weeknights because it doesn't take very long to prepare and cook. In the summer we grill it , but normally I broil it in the oven using this awesome glaze. Sweet brown sugar caramelized to perfection. Seriously, this is a no fail recipe. If you are trepidatious about fixing salmon, definitely try this recipe and see how it works for you. I think you will be making it often if you do. One word of note though. Make sure that the cookie sheet or shallow dish you are using is covered with aluminum foil and sprayed liberally with non stick cooking spray. The brown sugar tends to melt onto the  bottom and it is a beast to clean. Using aluminum foil makes for easy clean up. And a happier you when it is time to do the dishes. Enjoy!

                Brown Sugar Glazed Salmon 
1/4 cup packed light brown sugar
2 T dijon mustard
4 (6oz) boneless salmon fillets
salt and pepper to taste

1.Preheat the broiler. Prepare the rack of a broiler pan or a cookie sheet with aluminum foil . Spray with cooking spray.
2.Season the salmon with salt and pepper. Place in the pan.
3.Whisk the brown sugar and dijon mustard together in a small bowl until smooth. Spoon mixture evenly over the salmon fillets.
4.Cook under broiler until the fish flakes , about 15 minutes.
